Mom absolutely loved a Caprese Salad! I never liked raw tomatoes like this but she grew her own tomatoes, dressed them up with a little bit of fresh mozzarella cheese, fresh basil and a splash of homemade balsamic dressing, they were delicious! The key to this salad is using the very freshest ingredients and serving this on a warm summer day….. add some warm Italian bread to soak up all the dressing flavors and you have a light lunch! It’s incredible flavorful!

This was Mom's favorite salad and perfect for a warm Summer day!

Ingredients

  • 1 Baguette French bread, sliced
  • Fresh Basil Leaves
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon cracked pepper
  • 4 plum tomatoes, sliced
  • Mozerella, sliced
  • 3 Tbls olive oil
  • 1 tsp lemon juice
  • 1 tsp balsamic vinaigrette

Instructions

  1. Cut baguette into 16 slices
  2. Whisk together olive oil, salt, pepper, and balsamic vinegar.
  3. Alternate placing tomato slice, mozzarella slice and basil (I tuck a leaf of basil in between all the slices of tomato and mozzarella.
  4. Drizzle the olive oil dressing on top of the salad.
  5. Garnish or serve with french bread baguette slices. (you can even toast the bread if desired)
