Caprese Salad
Mom absolutely loved a Caprese Salad! I never liked raw tomatoes like this but she grew her own tomatoes, dressed them up with a little bit of fresh mozzarella cheese, fresh basil and a splash of homemade balsamic dressing, they were delicious! The key to this salad is using the very freshest ingredients and serving this on a warm summer day….. add some warm Italian bread to soak up all the dressing flavors and you have a light lunch! It’s incredible flavorful!

Caprese Salad
This was Mom's favorite salad and perfect for a warm Summer day!
Ingredients
- 1 Baguette French bread, sliced
- Fresh Basil Leaves
- 1/4 teaspoon kosher salt
- 1/4 teaspoon cracked pepper
- 4 plum tomatoes, sliced
- Mozerella, sliced
- 3 Tbls olive oil
- 1 tsp lemon juice
- 1 tsp balsamic vinaigrette
Instructions
- Cut baguette into 16 slices
- Whisk together olive oil, salt, pepper, and balsamic vinegar.
- Alternate placing tomato slice, mozzarella slice and basil (I tuck a leaf of basil in between all the slices of tomato and mozzarella.
- Drizzle the olive oil dressing on top of the salad.
- Garnish or serve with french bread baguette slices. (you can even toast the bread if desired)
