Snickerdoodle Scones
These sweet scones are so perfect with your cup of tea during the holidays. The combination of cinnamon and sugar just makes you want to snuggle up with a warm blanket in front of a fire and enjoy sweet moments of peace. Brush the tops with some honey butter and serve with apple butter on the side.. Oh my goodness.... Heaven!
Ingredients
Snickerdoodle Scones
- 2 1/2 cups flour
- 1/3 cup sugar plus 2 Tbls, divided
- 1 Tbls baking powder
- 2 Tbls plus 1 tsp cinnamon
- 1/2 tsp salt
- 6 Tbls frozen butter, grated
- 1 cup plus 2 Tbls heavy whipping cream, divided
- 1/2 tsp vanilla
- 1 egg
Instructions
Snickerdoodle Scones
- Pre heat the oven to 350 degrees. Spray a cookie sheet with non stick cooking spray or line with parchment paper
- In a large bowl, whisk together the flour, 1/3 cup sugar, baking powder, 1 tsp cinnamon, and salt.
- Add grated butter and cut in with the flour mixture using a pastry cutter or two knives until it resembles course crumbs
- In a small bowl, whisk together 1 cup cream, egg and vanilla. Add cream mixture to the flour mixture and stir to combine. (if the dough seems too dry, add a little bit more cream. If it seems too wet, add a little more flour). Continue to combine with your hands until a dough starts to form
- Turn out the dough on a lightly floured surface and knead gently. Roll gently with a rolling pin to about 3/4" thickness.
- Cut scones using a round cookie cutter. Place on your cookie sheet about 2" apart. Brush the tops of the scones with a little bit of cream.
- In a small bowl, whisk together the remaining cinnamon and sugar. Sprinkle the cinnamon sugar over the tops of the scones
- Bake scones until the edges are golden brown and a wooden pick inserted in the center comes out clean. About 20-25 minutes
- Serve warm with apple butter. You can also melt about 3 Tbls of butter and add some honey and mix together. Brush the tops of the scones with the honey butter and enjoy!
