Sue’s Oriental Salad
There are times when you just meet people that you know were sent directly from God. There is no coincidences about these types of friendships and my parents had this exact experience meeting Gary and Sue. It was a random Saturday when Mom and Dad were looking at houses. They met this sweet couple in one of the model homes. Both families purchased homes in the same neighborhood and they became best friends ever since. To this day, even though Mom and Dad are no long with us, Gary and Sue are still family to my brother and I, as well as their children. Sue made this salad one day and brought it over to the house and Mom and I were hooked! It was delicious and super easy to make! I was about 12 years old and I remember writing down this recipe immediately. I still have my hand written notes. Mom and I would make this often and I hope you do too!! Add some grilled chicken to this, which we always did too, and it’s a whole meal! Enjoy - and cheers to the many friendships God has placed in our lives!

Sue's Oriental Salad
This recipe comes from one of my Mom's very best friends and I was a kid when I first tried this salad. It was so good, I wrote down the recipe at twelve years old and Mom and I would make this often. It's so fresh, crisp and so flavorful! Super easy to make and perfect for a light lunch and for your tea table savory!
Ingredients
- 2 green onions, diced
- 1/2-1 cup of fresh cilantro, chopped
- 2 packages Chicken Flavor Top Ramon soup, uncooked (seasoning packets on the side)
- slivered almonds (optional)
- Sesame Seeds (optional)
- Water Chestnuts - sliced (optional)
- 1 lb bag Cole Slaw
- 1/2 cup olive oil
- 2 Tbls Balsamic Vinegar
- 2 Tbls sugar
- 2 packages Top Ramon Chicken Flavor seasoning (came with the soup)
- Salt and Pepper to taste
Instructions
- Crush up the Ramon noodles and place in a large bowl
- Add the Cole slaw
- Add chopped cilantro and green onions and all other salad ingredients
- Set aside
- Combine all dressing ingredients in a blender or a bowl. Blend or whisk until smooth
- Pour dressing over the salad and salt and pepper to taste
- Mix well, cover and refrigerate for at least 1 hour before serving
- You can also add grilled chicken breast to this salad and it is delicious!!
