Creamy Chicken Pot Pie Orzo

The ultimate comfort food packed with all the yummy goodness of a chicken pot pie combined with a creamy orzo pasta. Perfect for a cozy winter night AND it's a great savory to start your tea menu!

Ingredients

Creamy Chicken Pot Pie Orzo
  • 2 boneless skinless chicken breasts, cooked and diced or shredded
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paparika
  • 8 ounces of Orzo Pasta
  • 2 celery stalks, finely diced
  • 2 carrots, finely diced
  • 1/2 yellow sweet onion, finely diced
  • 5 Tbls butter
  • 2 Tbls Olive Oil
  • 2 cups chicken broth
  • 1/2 cup heavy whipping cream
  • 1 tsp chicken boullion powder
  • 1/3 cup all purpose flour

Instructions

Creamy Chicken Pot Pie Orzo
  1. Cook the orzo according to the package instructions. Drain and set aside
  2. Slice chicken breasts horizontally in half. Season with salt and pepper, onion powder, garlic powder, and paprika. Add a drizzle of olive oil to a skillet and cook the chicken over medium high heat until it reaches an internal temperature of 165. Shred the chicken or dice it into bite sized pieces
  3. In a large skillet over medium high heat, add the butter and olive oil. Once the butter is melted, add in the diced carrots, celery and onion. Allow the vegetables to sauté for about 5-7 minutes or until they stat to soften. Reduce the heat to low and sprinkle the flour over the veggies and whisk together until it forms a roux.
  4. While stirring frequently, allow the roux to cook for 2-3 minutes. Pour in the chicken broth, chicken bouillon powder, and heavy whipping cream. Whisk together until smooth and mixture starts to thicken.
  5. Add in the diced or shredded chicken and allow the mixture to simmer while the vegetables continue to cook and soften and until it reaches the desired thickness.
  6. Pour in drained orzo pasta and stir to combine
